摘要
通过对海带膳食纤维制备条件的探讨和各组分含量的测定,对其营养价值进行了评价。采用正交试验,筛选最佳工艺条件,进行基本组分的测定。所得到的不溶性海带膳食纤维的膨胀力>4.9mL/g持水力>490%,必需氨基酸占总氨基酸含量的36%。不溶性海带膳食纤维可作为功能性食品的膳食纤维添加源。
Nutrition assessment on the dietary fiber of kelp (DFK) is performed by exploration to preparation conditions and measurement of component contents.Undissolved dietary fiber of kelp can be produced through positive experiment and best technological parameters with expansibility >4.9mL/g,water holding capacity >490%,and 36% essential amino acid,and it can be used as additive source of dietary fiber for functional foods.
