蚕蛹油的性质及氧化稳定性研究 被引量:1

摘要 蚕蛹的油脂含量约30%,主要是三甘油酯,磷脂质含量也颇高,约3%左右。在特性值方面其碘值为118,皂化值192,折射率(20℃)1.4759,酸值22—30。蚕蛹油经毛细管色谱分析脂肪酸组成为:油酸占29%,亚油酸6%,亚麻酸36%及饱和脂肪酸28%。因此高含量的亚麻酸和磷脂质是该油的特点。蚕蛹油的贮藏安定性试验在60℃±2℃的烘箱内进行,测定结果显示蚕蛹油的氧化稳定性较好,抗氧剂对蚕蛹毛油贮存安定性的作用不大,但比较而言抗氧剂Ⅰ和Ⅱ比Ⅲ对蚕蛹油的抗氧效果明显。 The oil in silk cocoon is about 30% of its dry base. It was triglycerides mainly, and has 648ppm phospholipids. The other characteristics of silk cocoon oil are as follows: iondine value 118, saponification value 192, refractive index at 20℃ 1. 4759. The fatty acid composition of silk cocoon oil were as follows: oleic acid 29%, linoleic acid 6%, linolenic acid 36% and saturated fatty acids 28%. Subsequently, silk cocoon oil is very different from other vegatable oil or aminal oil in its content of linolenic acid and phospholioids. The storage stability of silk cocoon oil was determined by oven test at 60℃±2℃. The results showed that the silk cocoon oil has more storage stability than commercial peanut oil. Because it contain more phospholipids. In addition, the effect of different antioxidants on oxidative stability of silk cocoon oil was studied. The results showed antioxidant Ⅰ. Ⅱ was better antioxidative effect on silk cocoon oil than antioxidant Ⅲ.
