摘要 采用正交试验L9(33)对山丹花色素的提取条件进行了探讨,同时对其色素的稳定性进行研究,确定最佳提取条件是50℃,时间1h,乙醇浓度99.7%,其中影响的主次顺序为浓度、时间、温度。山丹花色素受柠檬酸、醋酸、抗坏血酸、一价金属离子的影响不大;在pH5或70℃以下长时间加热对其影响也很小,但日光照射、碱性环境、氧化剂、高价金属离子对山丹花色素色调的影响较大。 The extraction condition and the stability of natural pigment in flower of Lilium concolor were tested by using orthogonal experiment. The results showed that the pigment was extracted effectively when flower was dipped with 99.7 % of alcohol at 50 for 1 h. Among these factors, concentration of alcohol had the most effect on extraction of pigment, then duration and temperature of extraction. The stability of pigment was not influenced by pH 5 to 7, acetic acid, vitamin C and temperature (<70℃); however, the stability was effected significantly by light, alkalization environment, oxidizer and iron ion (Al3+).
