摘要
本文对引起乳酸发酵的细菌种类,乳酸发酵在卫生学、经济学和营养保健学方面的意义及科学依据,及其应用现状和发展前景作了综述。
In this paper, the bacteria which induce lactic acid fermentation,the significance and scientific principle of lactic acid fermentation in hygiene econmics,nutrilogy and health protection are summarizecd. Its present situation of application and perspective of development are also disscussed.
