摘要
介绍了用乙醇从构树果中提取红色素的过程,并对其理化性质也进行了试验,实验结果表明,提取方法简单、实用,红色素易溶于水和乙醇,在中性和酸性介质中,对光、热、多数金属离子以及蔗糖、葡萄糖等食品添加剂都是稳定的,具有开发价值。
The process of extracting Red pigment using ethyl alcohol is described, and its physical and chemical properties are also tested. Experiment results showed that the method of extracting is simple and practical. Red pigment is easy to dissolve in water and ethyl alcohol. It is stable for light? heat? most of metal ion and food additive such as cane sugar?glucose, in neutral medium and acid medium. Red pigment has development value.
