摘要
本文主要针对紫甘薯红色素的来源、结构、理化性质、提取及其在功能性食品、药物和化妆品等领域的应用及前景作概要论述。
The raw material,the configuration,the physics and chemistry quality,extraction of purple sweet potato color were summarized.The applications of purple sweet potato color in functional food,medicines and cosmetics were discussed.
