摘要
本文针对红曲色素内在的生化机理及其生产工艺,分析了红曲色素成分变化的原因,总结了不同碳氮源培养基,不同生长环境因子和不同工艺等条件下红曲霉产红曲色素的最新研究成果,简要提出了红曲色素产业化发展的研究措施和发展方向。
In view of Monascus pigment intrinsic biochemistry mechanism and its production crafts, The article has analysed the reasons why the composition of Monascus pigment changes,has summarized the latest research results of producing Monascus pigment of Monascus under the condition such as different carbon source, different nitrogen source,different growth environment factors and different production crafts of Monascus pigment etc. has proposed the industrialized development research measures of Monascus pigment and its developing direction briefly.
