回顾了食品中电磁杀菌技术的发展历史 ,总结了其技术特征 ,并对电磁场杀菌机理以及该技术在食品工业中的应用等方面进行了阐述。
The history of sterilizing foods with in electric magnetic field is reviewed. Its characteristics are summarized. The biological mechanisms and its application in food industry are described.
