摘要
从楔叶茶果实中提取了食用黄色素 ,研究了该黄色素的性能及稳定性。结果表明 ;该黄色素在 p H=6时较稳定 ,对氧化剂 (H2 O2 )的耐受能力强 ,蔗糖介质对色素的稳定性影响不大 ,多种金属离子对色素有增色作用 ,光和热对色素有明显的降解作用。
A New extraction and stability of yellow pigment from Ribes Diacanthum is reported.Experimental results showed:The pigment has good stability in pH=6 and has good endurance capability against oxidizing agent-H 2O 2, Sucrose has no obvious effect on its stability.Some metal inos can deepen its color,Light and heat can lead to obvious degradation of the yellow pigment.
