44种天然食物的抗致突变性研究

摘要 对44种天然食物的原汁或水溶性提取物用Ames试验作抗致突变性检测的结果发现:蘑菇、卷心菜、胡萝卜等19种天然食物对三种阳性致突变物均有不同程度的抗致突变作用。提示某些天然食物对人体可能具有抗致突变、预防肿瘤的作用。本文还对其抗致突变作用的机理作了讨论。 In this study, We used the Ames test to detect the antimutagenicity of original juices or aqueous extractions of 44 natural foods. The results showed that 19 natural foods, such as mushroom, cabbage, carrot, etc., possess large antimutagenic effects to 3 kinds of positive mutagens. These results suggest that some natural foods may possess antimutagenic and anti—carcinogenic effects in the human body. Also discussed are antimutagenic mechanisms of natural foods.
