摘要
烹饪专业是一门以技术为基础的技艺性专业 ,校内课堂教学与校外生产实习因其各自的局限性和欠缺性而制约着学生专业技能和综合素质的全面提高。校内模拟经营对湖北商专烹饪专业教学体系的完善。
Cuisine is a technical and artistic profession based on special training.There are many restrictions and obstacles in class teaching and off school practice which result in improving their students’ failure to ability and quality in a full way.The campus stimulated operation of HBCC’S Cuisine profession can promote the perfection of speciality teaching system,the form of teaching characteristics and the improvement of teaching quality.
