摘要
徽菜是我国成型较早的“八大菜系”之一,徽州饮食文化源远流长,内涵丰富,在博大精深的”徽文化”体系中占有重要地位。研究整理徽州饮食文化是继承弘扬这一文化遗产和开发利用独持旅游资源的基础性工作,也是“打好黄山牌,做好徽文章”的重要内容,必将对新世纪黄山旅游业的大发展产生积极的影响。
Hui-Cai(HuiZhou dishes)is one of the famous 'Ba Da Cai Xi ' (Eight Great Dishes Systems) in our country. Huizhou Diet culture has a long history and abundant content. It has important position in the Huizhou Culture System. Sifting and studying Huizhou Diet Culture is the basic work to exploit and utilize the uniqut tourist resources. It is also the important Component of 'to put up the Huangshan Brand, to Make the Issue of Huizhou.' Making this done will promote The development of Huangshan tourism in this new centure.
