就热处理对果蔬采后生理生化及品质的影响、热处理对防止果蔬腐烂和抗冷害的作用进行了探讨,并对热处理在果蔬贮藏保鲜上的应用前景进行了分析。
Effects of heat treatment on physiology and biochemistry and quality of fruits and vegetables and preventing their decay and chilling injury are reviewed. And the application foreground of heat treatment on storage and preservation of fruit and vegetables is viewed.
