摘要
对陕西省几个主要胡萝卜品种营养成分的含量进行了全面细致地分析。结果表明,根据不同胡萝卜品种营养成分含量,可以针对性地进行加工利用,充分发挥各品种的优势。
The main nutritional composition of 10 carrot varieties in Shaanxi Province were analyzied. The result indicated that the most high total- carotene was Hanzhong yellow carrot, and Vitamin C , amino acid and soluble solids were also quite high. The most high lycopene was Hanzhong-red carrot which was 3-7 times about others species. The most high Vitamin C was Sanyuan touxihong carrot and the most high protein was Qishan touxihong carrot. According to the nutritional composition content of different variety of Shannxi carrots, carrots can be processed and fully exerted their characteristics.
