毛细管电泳在牛乳中酪蛋白含量测定及掺假检测方面的应用 被引量:35

摘要 运用毛细管电泳技术可以快速分析牛乳中的蛋白组分 ,检测牛乳中添加杂蛋白的掺假情况。实验中获得了原料乳、巴氏乳和超高温乳的毛细管区带电泳图谱 ,通过 32KaratSoftware软件计算了乳中酪蛋白的含量 ,检测了乳粉中添加大豆蛋白的毛细管凝胶电泳图谱。该方法具有快速、高效、样品用量少、经济等优点。 The fraudulent addition to milk is usually occurred with the rapid development of dairy industry. Fast analysis of protein fraction and detection of adulterations in the milk can be done by capillary electrophoresis. Capillary electropherograms of raw milk, pasteurized milk and UHT milk were gained by capillary electrophoresis. The casein to total protein ratio(%) in different sample was calculated by 32 Karat Software. The SDS-CGE electropherograms of samples of milk powder containing different quantity soya protein were also gained in this paper. The advantages of this method are fast, efficient, less sample needed and economic.
