摘要
根据酒老熟化的机理,用物理化学兼而有之的方法,采用一组有催化活性的Pt-Pt电极,参比电极及恒电位极化电源系统进行电催化.以电子作为氧化剂和还原剂,加速老熟化过程中氧化、还原、缔合和酯化等反应的速度,将自然状态下须3年以上时间才能完成的过程,缩短为3天左右.不向酒体带进任何金属离子和有害人体的物质,并可根据酒基的情况,调节反应方向、速度,在一定范围内调节产生色、香、味物质的量,生产出合格的产品.
Based on the aging mechanism of wine, a chemical and physical technique is used to catalyze wine with a set of catalytic activity Pt—Pt electrode, reference electrode and constant potential polarized current system. The reactive speed of oxidation, reduction, association and esterification during the aging process of wine is sped up with electronics as oxidant and reducer. In natural state this aging process takes more than three years, but now the period is shortened to three days. Metal ion and other harmful material are not added into the wine. The direction and reaction speed can be regulated so as to produce qualified product.
