影响南方葡萄贮藏保鲜效果主要因素的研究 被引量:1

摘要 本试验在杭州、上虞葡萄产地进行。以巨峰、京超等6个品种为试材,对影响葡萄贮藏保鲜的主要因素进行了比较分析。结果表明:巨峰葡萄用SO_2缓释片防腐,0.015mm聚乙烯膜袋封装,在0-2℃温度下贮藏110天,商品穗率达95.8%,穗轴青绿硬实,果粒饱满多汁,风味纯正,营养成份降幅小;在室温(>27℃)下贮藏7天,总腐烂率达23.9%,保鲜效果不理想。品种耐贮性以巨峰为佳,京超、伊豆锦、黑沃林次之,龙宝、红皇后不适宜于长期冷藏。试验表明影响南方葡萄贮藏保鲜效果的主要因素是温度、防腐剂种类、品种耐贮性和封装材料等。 This experiment was carried out in Shangyu county and Hangzhou, Zhejiang province to study the storage techniques of grapes.After 110 days storage, by the ways of slow emission of SO_2, package with 0.015 mm PE film and cold storage at 0-2℃, the commercial bunch rate was kept at 95.8%, the bunches of grapes remained green, the grape flavor was pure, the grains of grapes were plump and juicy, and the nutrient content of grapes decreased a little. After 7 days on the same condition but at room temperature (>27℃), the total rot rate was up to 23.9%, so the storage effect was not good. Kyoho was the best variety for grape storage, then Jinchao, Izunishiki and Black Olympia. Long Bao and Red Queen were not suitable for long storage. The results showed that the major factors affecting grape storage in southern China were temperature, preservative, variety and PE film package.
