摘要
无菌包装技术起源于40年代,至今已有半个世纪,但依然方兴未艾,特别是80年代以来,随着高科技的发展,无菌包装技术和应用也得到了迅速的发展。据报导,美国已有50%以上浓缩柑桔汁,意大利有80%以上的蓄茄酱采用无菌大包装。我国无菌包装起步较晚,但近年来发展迅速,应用范围不断扩大。据统计我国目前应用无菌大包装设备已近50条生产线。包装的物料有多种多样,如蕃茄酱、西蕃莲汁、桃浆、山楂酱、梨杏酱、苹果酱或浓缩汁等。什么是大袋无菌包装呢?大袋无菌包装就是将被包装的物料先进行短时加热杀菌,再快建冷却到室温,在无菌条件下灌装到预先杀好菌的大袋中,并马上盖好盖子密封起来,达到贮存和保鲜的目的。
The process of aseptic bag packaging can have the following steps: first, sterilize the material packaging with heat in very short time and then quickly restore the temperature to normal;second,fill the material into sterilized bags and seal these bags at once to keep fresh. This article gives a comment on the request for aseptic bag packaging as well as the composition and processing of its packaging equipment. The author also explains the control system and its application.
