摘要
低聚糖(oligosaccharides)存在于多种天然食物中,如水果、蔬菜、牛奶、蜂蜜等。过去十多年里,低聚糖作为低热值甜味剂在世界各地被广泛应用,尤其在日本、欧洲,其应用范围更是普遍。1991年,日本政府订下“特殊健康用途的食品(FOSHU)”法则,低聚糖中的低聚果糖、低聚半乳糖。
Oligosaccharides have been used as low-calorie sweeteners globally in the past decades, particularly in Japan and Europe. This group consists of more than 10 complex sugars, including galacto-oligosaccharide, lactulose, lactosucrose, fructo-oligosaccharide and palatinose, and etc. Their characteristics, production and application are summarized in the article.
