摘要
作者利用德国联邦粮食和马铃薯加工研究院制粉所中试车间的有利条件,进行了心磨系统采用光辊和齿辊研磨小麦的对比试验。本文给出对比试验中两种粉路研磨软、硬麦时对出粉率和灰分的影响情况,并就此进行了讨论。
In the pilot of Federal Center for Cereal, Potato and Lipid Research an Contrast experiment on influences between using smooth roll and fluted roll in the reduction system on flour yield and ash content was conducted. The influences during milling of soft wheat and hard wheat are discussed.
