摘要 高压灭菌法和过滤除菌法处理的大蒜汁,对S.mulans和S.sobrinus生长和管壁附着力有无影响,大蒜汁对粗制葡萄糖基转移酶(Glase-C)活性有无影响,研究表明,大蒜汁对Glase-C活性无抑制作用,高压灭菌法处理的大蒜汁对供试菌株无抑制作用,过滤除菌法处理的大蒜汁对供试菌株有明显抑制作用。 Autoclave-sterilized and filter-sterilized garlic juice were examined for their effects on the growth and adhesive ability of S. mutans and S.sobrinus, and on the activity of crude glucosyl-transfcrasc-C(Gtase-C). It was found the garlic juice had no inhibiting effect on activity of Gtasc-C, the autoclave-sterilized garlic juice had no inhibiting effect on the experimental bacteria, whereas the filter-sterilized garlic juice caused a significant inhibition on experimental bacteria.
