The current world situation of sweet potato production, consumption, processing and utilization reviewed. Analysing the nutritional advantages and disadvantages of sweet potato. It was indicated that the ideological resistance to sweet potato consumption must be removed through education, low digestability, high reducing sugar content and browning sensitivity should be overcome by using advance technology. Morever, high efficient drying method for sweet potato and good techniques for raw sweet potato storage should be worked out. The potential of sweet potato as one of the main food material for human therefore, could be recognized.
