摘要 本文研究了7周龄AA肉鸡的肉用性能和肉质。结果表明;屠宰率、半净膛率、全净胜率、胸肌率、腿肌率及腹脂率分别为83.37%、76.21%、64.39%、39.40%、43.59%和1.18%,公母差异不显著。公鸡的心、肝、肌胃及头、脚重于母鸡。含水率、失水率、系水率、熟肉率和肌纤维直径胸肌分别为72.43%、29.61%、59.12%、70.14%和32.58μm,腿肌分别为74.22%、21.64%、71.39%、65.46%和28.38μm。 A study on the meat yield and quality of AA broiler aged 7 weeks was conducted.The results indicated that percentage of dressed weight,eviscerated yield with giblet,eviscerated yield,breast muscle yield, leg muscle yield and abdominal fat were 83. 37%,76.21%,64.39%,39.40%,43.50% and 1. 18%,respectively. The difference between male and female was not significant. The male weight of heart,liver,gizzard,heat and foot were higher. Percentage of water,water loss,water holding capacity,cooking percentage and fibre diameter were 72. 43%, 29. 61 %, 59. 12 %, 70. 14% and 32. 58μm, respectively. for breast muscle;corresponding values for leg muscle were 74. 22%, 21. 64%, 71. 39%, 65. 46% and 28. 38μm.
