微波加热杀菌研究需要解决的课题之一是对象菌的死亡速率的测定方法。本文提出了线性升温条件下D值(杀死90%的对象菌所需时间)的计算方法。将大肠杆菌悬置液静置于2450MHz微波场内加热,在一定的温升条件下测定不同时刻的残菌数。同时进行了水浴杀菌对照实验.得出大肠杆菌微波加热杀菌的D值的表达式DM(t)和水浴加热杀菌的D值的表达式DW(t)。在60℃以下DM~DW;
One of the problems in the study of microwave sterilization is the measurement of the death rate of the microbe. In this paper, it is presented a mathematical model used to calculate the value D, the sterilization time during which90% of the microbe has got dead, under the condition of linear heating-up.The expressions for Dm (t) and Dw (t), which correspond to the ualues D of theEscherichia colt in microwave sterilization and water heating sterilization, areobtained by placing the liquid medium inoculated Escherichia colt in the microwave field with 2450 MHz, measuring the amount of the residual microbe atdifferent moments on certain condition and comparing it with the experiment ofwater heating sterilization.
