薯干原料深层发酵柠檬酸生产中污染菌的分离与防治

摘要 本文结合生产实践对薯干原料深层发酵生产柠檬酸工艺中的污染菌的分离与防治.进行了实验研究。 The submerged fermentation for producing citric acid from dried sweet potato is studied The separation and prevention of bacterium contamination in fementation process are presented in this paper. Difference between the principal contaminating bacterium,pseudo black bacterium,and the useful bacterium is discussed The factors influencing the normal process for producting acid by bacterium action are detailed.It provides the necessary basis for preventing and eliminating the contamination from harmful bacterium.
