脉冲高电压液体灭菌技术的研究

Investigation on Killing of Bacteria by Pulsed High Voltage Application

介绍了脉冲高电压液体灭菌的实验研究工作．研究结果表明，利用脉冲高电压可以在常温条件下100％地杀灭液体中的细菌．对液体食品还能保持其色泽、品味不变、维生素、氨基酸等营养成份不受破坏，还对灭菌机理作了分析和探讨．

In this paper an expcrimental research on killing of bacteria in liquid by pulsed high voltagc application was prcscnted. The results of the rescarch show that the bacteria in liquid can be fully killcd in normal temperature condition by pulsed high voltage application. And the colour, the flavour and the nutrition of the drink which is trcated are not changcd. The principle of killing bacteria is also analyzed and discussed.
