摘要
为了解河南产食物中各种维生素的含量,采用荧光分析及纸层析等方法,对河南产120余种常用食物的的VtiB1、B2、C和胡萝卜素的含量进行了测定。河南常见食物中:小麦、玉米、黄豆等粮谷类和豆类制品中VitB1含量最丰富。VitB2主要存在于肉、鱼、蛋、奶等动物性食品中。白菜、萝卜、西红柿等新鲜蔬菜中ViC的含量较高。胡萝卜素则主要存在于韭菜、青菜、菠菜、胡萝卜等有色蔬菜中。而为制订河南食物成份表,指导河南人民合理膳食及一些疾病的防治提供科学依据。
In order to know the amount of various vitamins in the foods in Henan and provide scientific basis to formulate the table of food composition,fluorescent analysis and paper partition chromatography were used to determine the amount of Vitamin B1,B2,C and carotene in more than l20 common foods in Henan.The amount of vitamin B1 is the richest in the cereals such as wheat and maize,and the products of beans.Vitamin B2 is rich mainly in the animal foods such as meat,fish,milk,eggs,etc.Vitamin C is rich in the fresh vegetables such as cabbage, radish,tomato,etc.Carotenes are mainly in the yellow or green vegetables,such as spinach carrot,etc.
