“硒芽菜”硒积累规律的研究 被引量:5

摘要 研究表明,培育“硒芽菜”所选用的Na2SeO3的最佳浓度为1×10-6~20×10-6,在此范围内芽菜所积累的硒量与浓度有明显的线性关系。回归方程:绿豆芽Y=-0.1193+0.9272X,r=0.9886;苜蓿芽Y=2.5095+3.6637X,r=0.9831。苜蓿芽硒的积累量大约为绿豆芽的5倍。“硒芽菜”的感官品质和对照相比无差异,且具有栽培普遍、周年供应等优点,可作为一种良好的硒补充源。 The studies on the growth of Se-sprouts were conducted. Results indicated that the optimum concentration of Na2SeO3 was 1-20ppm. Selenium accumulation in the sprouts showed a significant linear correlation with different concentrations of Na2SeO3 in this range.The recession equations were: (1)Y=-0.1193+0.9272X,r=0.9886 for mungbean sprouts;(2)Y=2.5015+3.6637X,r=0.9831 for alfalfa sprouts. No difference was found in the sensory quality between the sprouts without fortified Se and the Se-sprouts.Widely grown and supplied year round, Se-sprouts could be considered a new way to sup plying selenium.
