摘要
采集太原市居民厨房排油烟机收集盒内的油烟,采用Ames试验、SOS显色试验和小鼠骨髓微核试验,对其进行致突变性研究。结果表明:太原市居民烹调油烟物质具有致突变性,但因烹调油温在250℃以下,其致突变力比国内报导的略弱。
The oil from oil smoke exhauster was collected in kitchens of residents in Taiyuan. The mutagenicity of the oil was studied by Ames test,SOS chromotest and Micronucleus test in mice.The result shows that the oil has mutagenicity.But the mutagenic activity is weaker than that repoted in our country.The weaker mutagenic activity resulted from the oil temperature below 250℃.
