摘要
本课题主要研究了大豆磷脂的酰化改性。选用适宜的酰化剂与磷脂反应,使脑磷脂游离胺基接上酰基,并加碱性试剂中和,以降低产品酸价。酰化改性后的磷脂乳化性能较原料磷脂有显著提高,其质量指标完全符合同类产品要求。
The subject focuses on the acetylating modification of soybean phosphatide Proper acetylating agent is selected to react with phosphatide in order that the free amino group of the phosphatidyle ethanolamine is connected with the acetyl, and then the sodium hydroxide aqueous solution is added to neutalize the modified lecithin so as to reduce the acid value of the product The emulsifying property of the modified lecithin is better improved than that of the original lecithin and its product quality is up to the requirements for the same product
