摘要
本文报导了吉首市5种传统腌熏食品中亚硝酸盐含量的调查结果。结果表明,这类食品中都含有亚硝酸盐。其亚硝酸盐含量的均值(24.5mg/kg)高于其鲜类食品。通过比较分析,亚硝酸盐的形成及含量与腌熏类食品的制作技术及环境有关。
This paper givcs the results 0f content of nitrite ln five ltinds of traditional smoke food in Jishou. the result shows that there were nitrites in smoke foods. Aad average content of nitrites is 24. 5mg/kg- Compared smoke f0ods with fresh foods,its nitrite is approximately 7. 2' time higher than that of fresh food. lt is suggested that the f0rm and conten 0f nitrite are related to preparation techn0l0gy of smoke food and environment.
