江西玉山猪肌肉组织学特征与肉质的关系 被引量:59

摘要 用石蜡切片法和冷冻切片法,测量了玉山猪背景长肌和半腱肌的450倍视野肌纤维根数、肌纤维板切直径、肌纤维间距、肌束纤维间距、肌大束纤维间距和脂肪分布。并以长白猪背景长肌和半腱肌样品作对照。测量结果表明:1.的纤维直径──五山猪小于长白猪;2.肌束间距─—玉山猪小于长白猪;3.肌大束间距─—玉山猪大于长白猪;4.玉山猪脂肪分布多而均匀,长白猪肌由只在肌大束可见少量脂肪组织。 The M,semitendinosus and M.longissimus dorsi of local Yushan swine and DenmarkLandrance swine were studied on number,diameter and septal distance of muscle fibers,septaldistance of muscle bundles and fat coritent by paraffin and frozen section;The results indicated that:1.The diameter of Yushan swine’s muscle fibers is smallerthan that of landrance swine.2.The septal distance of Yushan swines mtiscle bundles is small-er than that of Iandrance swine.3.The septal distance of Yushn swine's great muscle bundlesis larger than that of landrance swine.4.The fat content of Yushan swine's muslce bundles islarger than that of landrance swine's and is of rectangular distribution.All these indicate that the meat quality of Yushan swine is better than that of landranceswine.
