摘要
本文介绍了当前我国人民的食物结构状况和食品工业生产中存在的一些问题,阐明了营养、卫生与色、香、味的辨证关系,指明了以功能食品、发酵食品为主导的食品工业发展方向。
This paper introduced the present food structure of Chinese People.Some problems in food production and some harmful effects brought about by these problems on the survival,health and reproduction of mankind.It was demonstrated that nutrition was the highest goal for food.Hygiene was a prerequisite,colour,fragrance and tastewere necessary conditions. Function food and Fermentation food are considered as the direction of food industry in this paper.
