摘要
本试验模拟清茬大曲曲房管理，应用“以曲养曲”技术，研究了接种种曲提高大曲糖化力的可能性。结果表明接种种曲不仅能改善大曲外观质量，而且能提高大曲糖化力。认为“以曲养曲”是一项改革传统大曲生产工艺的新技术。
Simulating management of light flavor type QU Leavenroom, we have studied possibility of enhancing diastatic of Da-Qu by technology of using on to product Qu. The results show that inoculating seeded Qu not only improve outward quality of Da-Qu but also enhance distatic of Da-Qu. We consider using Qu to product Qu'is a new technology to reform traditional craftsmanship of Da-Qu.
