摘要 本文简述国外在食品加工业中应用的滚筒干燥装置的类型,讨论了滚筒干燥装置的结构特点及有关传热传质的理论,并指出在我国食品加工业中应用的广阔前景。 Although some information is available in the literature on 'cylinder' drying of fibrous material, there is very little on the drum drying of foods. This paper presents detailed information on the drum drying in the food processing industry abroas. This includes: a brief description of the types of drum dryers available,a discussion of the theory of drum drying and the factors affecting heat and mass transfer, and a discussion on the application of drum drying in the food industry of our country.
