所谓品质是指物品所具有的性质与特性. 果蔬的品质包括基本特性、机能特性和二次特性. 基本特性包括营养特性、安全性(农药残留、天然毒素等).机能特性是指果蔬物对人类感官、生理作用的特性, 它包括外观、色、香、味、力学特性等嗜好特性和调节血压、降胆固醇作用的生体调节机能特性. 二次特性包括流通特性和附加特性.
