摘要
当今世界食品工业发生迅速变化,被称为21世纪的新食品——功能性食品的开发、研究正在发达国家形成高潮,但最热门、最有普遍意义的是膳食纤维.现已确认膳食纤维可维持正常血糖、血脂和蛋白质水平.并可控制体重、预防结肠癌、糖尿病、冠心病等.近年来我国人群中上述病的发病率呈上升趋势。
The processing of the preparation and charaterisation of dietary fiber from bagasse was studied. The content the total dietary fiberof the end-product reached 75. 40%while the soluble fiber was 14. 35%,and insouble was 61.01%. The data presented in this study indicate that dietary fiber of bagasse could lead to satisfactory functionaily as a dietary ingredient in food products.
