本文对喷淋水外循环杀菌装置的结构原理、性能特点和推广应用价值作了简要介绍，重点是针对该系统的传热学特点，阐述了关键设备换热器的设计步骤，推导并建立了非稳定传热条件下求解总传热系数的数学模型。

In this paper, The principle, Charactristic and apply value of the sterilizing unit with spray water outer circulating are introduced briefly. Aim at heat transfer characteristics of this system,design procedure of the heat exchanger have been expounded, And the mathematical model for calculating total heat trasfer coefficient on the unstable condition has also been established.
