摘要
不少香精油类物质具有杀菌作用,可用作食品天然防腐剂。本文对柠檬醛、香精油的抗菌机理及本领域的研究进展、存在的问题作一综述,并对其发展前景进行了讨论。
A number of essential oils have antimicrobiological activity.They could be used as natural chemicals to prevent food decay.In this paper,mechanism of antimicrobial activity of citral and related essential oils,recent achievement in antimicroorganisms are reviewed.The prospect and problems are also discussed.
