摘要
在氨催化剂存在下,以葡萄糖母液和氨水为原料合成高色率焦糖色素,分别研究了反应温度,反应时间,催化剂类型及用量,葡萄糖母液波美度等条件对合成反应的影响,确定了最佳工艺条件。该方法合成高色率焦糖色素的最佳工艺条件是:反应温度为145℃,反应时间30min,葡萄糖母液波美度为30,催化剂用量为葡萄糖母液质量的 5%。焦糖色素的色率可达到 75526EBC以上。实验研究表明,氨水催化剂具有催化活性高,价廉易得,后处理工艺简单,无腐蚀性,无环境污染等优点。
The ammonia catalyzed synthesis of caramel pigment of high color ratio by the reaction of dextrose mother liquid and ammonia was studied.The effect of reaction temperature,reaction time,the assortment and amounts of catalyst,the baume degree of dextrose mother liquid on the synthesis were studied, and the proper technological conditions were given as follows: reaction temperature is 145℃,reaction time is 30min; the baume degree of dextrose mother liquid is 30;the amounts of catalyst is 5%(based mass of dextrose mother liquid).The color ratio of caramel pigment can reach 75526EBC. Experimental results showed the ammonia catalyst had many advantages such as high activity, easy preparation, low cost, and easy post-treatment. It was also non-corrosive and non-pollutant to the environment.
