不同加工方式对乳中生物素含量影响的研究

摘要 本文采用滴定法检测UHT(高温瞬时杀菌)、巴氏杀菌和某婴儿奶粉的喷雾干燥杀菌对牛乳中生物素含量造成的影响。结果发现,巴氏杀菌对生物素含量无显著性影响,UHT对生物素含量造成一定影响。而婴儿奶粉可能因为添加了生物素而使生物素含量升高。本方法用于比较不同加工方法对乳中生物素含量的影响,并可适合小型收奶站对牛乳中生物素的快速检测。 This article studies the effect of different processing on biotin content in milk by titration method.The processing includes Ultra heat treatment (UHT), Pasteurization and spray drying. The results turned out that Pasturization does not affect the content of biotin, UHT influences the content. While spray drying abnormally affect the content much. The quick method of titration is suitable for small and medium companies which can't afford big equipments.
