摘要
A study on the effect of sorbic acid to prevent dried fishery products from mould development is given in this paper. The main contents include 1) the effect of mould control; 2) the observation on the residue of sorbic acid in the fishery products;3) the influence of adding sorbic acid on the color,odor, taste and quality of the products.
