近年来对虾养殖业发展很快，无头对虾的出口量也大大增加。但我国每年被丢弃的对虾下脚料约有7000～8000吨，如何科学地充分加以利用虾体就成了亟待解决的问题。对此国内外都不同程度地进行过一些探索。除生产虾酱和甲壳质外，美国利用虾废弃物回收蛋白质，提取虾青素等类胡萝卜素，生产虾粉、虾头液体饲料、调味海产品和模拟虾风味产品；
In this paper,the authors analyze in detail the respective nutrient comp- ositions of the head and the body of prawns.On the basis of comparison,the nutritive value of the prawn head is affirmed and suggestions are put forward for the comprehensive utilization of the prawn head.
