马铃薯和普副粉生产红曲色素研究 被引量:7

摘要 以马铃薯和普副粉或甘蔗渣和普副粉为原料,添加适量的无机氮源,进行固态发酵,以代替大米原料生产红曲色素。结果表明,用紫红红曲霉3532菌种,按马铃薯90%和普副粉10%,或甘蔗渣90%和普副粉10%,水分55%,无机氮0.27%~0.30%,起始pH值5,发酵温度30℃,红曲色素用70%的乙醇溶液在40℃下搅拌抽提,色素产量可提高约10%。 Solid state fermentation was made of potato or sugarcane bagasse with second clear flour on a medium supplemented with adequate N source in order to produce monacus pigment without rice. The results indicated that the production of monacus pigment per unit medium increased if a small amount of inorganic nitrogen source was added. The optimum amount was in the range of 0. 2% to 0. 3%. The productive test with the new processing has been accomplished in the laboratory.
