菜名是菜肴的重要组成部分 ,具有商业价值和推销功能 ,中国菜肴命名方法多样 ,特别是艺术菜名 ,古已有之 ,体现了中国饮食文化的博大精深。通过揭示潮菜命名与潮汕文化的联系 ,阐明了潮菜的命名虽然多种多样、各有称谓 ,但是潮菜的命名却具有潮汕海洋文化的共同特征 ,充分强化了潮汕地域性文化的集体特征 ,这对于形成潮菜成熟的文化品牌风格具有积极的意义 ,同时对规范潮菜菜肴的命名方法进一步探讨 ,提出建议。

Dish names are part of food culture, which , especially the artistic d ish names, are of commercial value and promotion. There have been various ways t o name dishes since ancient time, displaying the richness of Chinese cuisine. By exploring the relationship between those names and Chao-Shan culture, this art i cle describes the various ways of dish-naming, which all share and display the c ommon core of Chao-Shan Ocean culture and which is positive for Chao-Shan cuis in e to form its own mature culinary culture. The article makes a further research on the normative naming of the local dishes and offers a few proposes.
