益生菌是一类人体的微生态调节剂,具有广泛的生理功效,有重要的理论意义和应用价值。在食品中添加益生菌是一种重要的应用形式,能对人体营养和健康提供良好的保障。本文综述了益生菌的概念、保护机理、功能性质及其在食品中的应用概况,为新型保健食品的开发提供一些依据。
Probiotics is very useful microecologics for human nutrition and health,which has comprehensive physiology function.Adding probiotics to food is good for food nutrition and health.This article reviewed the development of its concept,protection mechanism,function and the application in food industry.These will provide basic material for new type food production.
