摘要
报道斯达油脂酵母U9018以蔗糖为基质产生的胞外多糖的一些理化性质.胞外多糖由D-甘露糖、D半乳糖和D-葡萄糖醛酸组成,三种单糖的含量比值为1:1:1,单糖为毗喃型糖.该多糖在低浓度时有较高的粘度,且粘度随浓度或加热温度的提高而增大,20℃下,0.5%浓度的多糖溶液可形成凝胶,1.5%浓度的多糖溶液形成的凝胶强度可达21.65g/cm ̄2,凝胶无色透明,U9018多糖对黄原胶有显着的增粘作用.
Some physicochemical properties of Lipomyces starkeyi U9018 exopolysac-charide are reported.The polysaccharide is composed of D-mannose,D-galactose and D-glu-curonic acid,the ratio of three monosaccharides is 1 :1 :1 ,and all three monosaccharides areinβ-pyranoid configuration. The polysaccharide solution shows viscosity which can be in-creased as the polysaccharide concentration or the temperature of solution are increase.A so-lution with only 0.5%polysaccharide can form gel at 20℃. the gel with 1.5%polysaccha-ride have an intensity of 21. 65 g/cm ̄2,the gel is colorless and transparent.U9018 exopolysac-charide can enhance the viscositv of Xanthan solution.
