摘要
鲜食玉米又称果蔬玉米,目前在国内外市场上十分俏销.它不仅鲜嫩香甜,而且营养价值高,其蛋白质、脂肪、维生素、糖等含量大大超过普通玉米.因此,它的贮藏保鲜问题受到广大科技人员的关注.冷藏保鲜就是其中的一种方法.受农开办委托,就冷冻加工鲜食玉米的有关问题进行了研究探讨.
Fresh corn is also named fruit and vegetable corn,which is well-sold both indomestic and foreign market. It not only tastes delicate and sweet,but also contians good nourishment. It contains more protein, fat,vitamin and carbohydrate than common corn. Therefore,the storing and freshing of the cornis widely concerned by scientific and technological researchers. Refrigeration is one of the ways of freshing the corn. In this paper,the exploration related to the refrigeration of the fresh corn is made in detail.
