如东海鲜菜肴具有悠久的历史和鲜明的特色。如东海鲜菜肴的总体特色是:海鲜原料资源丰富,选料注重鲜活;烹调技法注重突出原料本味,成品菜肴以鲜为核心;名菜名点品种丰富。
Rudong sea food delicacies have a long history and distinctive features which, in general, can be expounded as follows: abundant sea food resource, important affection for freshness and living in material choice, attention to keeping original taste in cooking process of different ingredients, especial concern about the freshness for cooked dishes, and a wide variety of famous dishes and refreshments.
