摘要
纯生仙人掌啤酒以优质麦芽和食用仙人掌为主要原料,加啤酒花,经酵母发酵酿制而成,既有纯生啤酒特有风味,又具有一定的保健作用。该文对仙人掌汁的制备,仙人掌汁的添加量、添加方法和时间等工艺参数的优化设计,及纯生啤酒酿造进行了探讨。
Cactus draft beer is a kind of beer using malt and cactus as raw material, which is brewed with yeast and hops. It not only possesses of the unique flavor of draft beer, but also has a certain health care function. This paper discussed the cactus juice preparation and draft beer brewing method, and optimized the juice addition amount, time and method, and other processing parameters.
